1. How to Make the Piada Flat Bread
Before you stuff your piada, you need a good recipe for the flat bread. Here are the basics on making and cooking piada dough.
Is it a crepe or a burrito? Or is it a folded pizza? The piada (or piadina) is none of the above. Instead, the soft flat bread from the Emilia-Romagna region of Northern Italy is in a class of its own. Typically filled with meats, cheeses, vegetables or even sweets like Nutella, a piada is usually sold from a street kiosk called a piadineria and meant to be enjoyed hot, perfect for a leisurely stroll.
