1. India: Tandoori
A tandoor oven is ideal for this chicken, but you can always
grill the yogurt-coated meat, serving with rice, naan and cucumbers.
2. Tennessee: Pork Ribs
The quintessential Southern barbeque is made with a savory
dry rub and a pomegranate vinegar mop, grilled over indirect heat. Serve with
potato salad, coleslaw and barbeque beans.
3. Texas: BBQ Brisket
For a super tender brisket, inject the meat with garlic
butter, rub with a dry seasoning mix and grill for three hours, misting with
an apple cider vinegar spray and smoke for another three hours. Wrap in paper
and smoke again for six more hours. It’s a lot of work, but so worth it. Serve
with a skillet cornbread, mac and cheese and fried okra.
4. Korea: Beef Bulgogi
Here, super thin beef is marinated in sugar and then sesame oil
and soy sauce before stir-frying in a skillet. Rice, kimchi and pan-fried vegetables
make the best sides.
5. Japan: Chicken Yakitori
Izakayas, or pubs in Japan, serve grilled meats alongside
cold glasses of beer. You can make it at home too, with the broiler or grill
and serve with finger foods like sushi, pickles and edamame.
6. China: Char Siu Pork
Pork shoulder gets a pinkish hue thanks to a packet of Xá
Xíu/Char Siu seasoning. You can doctor up the mix a bit, but the powder is
pretty flavorful on its own, too.
7. Mozambique: Peri Peri
Bird’s eye chili peppers (AKA peri peri) give this African
chicken its signature spiciness. Double the marinade if you want some extra
sauce on the side. Serve with something cool, like salad and corn.
8. Jamaica: Jerk Chicken
This spiced chicken can get spicy if you go heavy on scotch
bonnet peppers, or you can go easy. A traditional side is rice and coconut milk
with pigeon peas.
9. Mexico: Barbacoa
Marinate beef shank, chuck roast, or beef brisket in a mix
of chilies and spices, then stew. You’ll
get excellent shredded beef that makes the most awesome, authentic tacos.
10. Brazil: Churrasco
Churrasco starts with long, thin pieces of beef, like skirt or
flank steak, soaked in an orangey marinade. The green chimichurri sauce that's traditionally
served alongside is bursting with flavor.
11. Lebanon: Grilled Chicken with Garlic Sauce (Djej Mishwe)
The lemon juice and cider vinegar marinade tenderizes the chicken
to perfection. A garlic sauce adds another layer, and spicy potatoes are so, so
good on the side.
